U, V, and W are for the 3 phases and go to the three coils in the motor. They do not connect to the encoder.

Thank you, YellowDog. I have just read the datasheet. I still have questions. In particular, how to connect the Sparkfun motor-driver pins to the NUCLEO64 F401RE microcontroller board? As far as I understand, three coils of each electromotor will be controlled by PWM (Pulse Width Modulation). There are six PWM pins on the microcontroller board. Each motor-driver has UL, UH, VL, VH, WL, WH. Please see the photo attached. Could you please specify how to connect all these pins? Thank you.
I’m afraid I can not help you with this part, you will need to read the Sparkfun documentation and adapt it and your code to fit your particular micro-controller board.
