Can anyone please advise me if there is a chip (max 3.3vdc) that will accept 8 parallel digital inputs (LOW or HIGH) that can be then sent down 1 combined analog output. I want to make an analog sensor that changes it’s value depending on the values of the 8 digital inputs.
I have looked at DAC chips but maybe I am missing something as they do not appear to be the answer.

No chip needed, just use an R2R ladder.
What you’re asking for is the very definition of a DAC. Why do you think it’s not the answer?
Please explain how the single analog output is dependant on the 8 digital inputs. What’s the formula? Seems quite critical in forming a good answer.
