Yes you can do this, just make sure the dimension layer cuts through the pads (that way they remain on the edge of the pcb). Although this will only make it so you have exposed copper on the top and bottom, not the side of the pcb.
They are commonly called gold fingers and they usually cost extra.
One way to do it without any special process:
If they allow you to place a via/pad right on the edge of the board it should get plated as the outer cut is made at the very last. If they do not allow you to place holes outside the board, you could fake it by making the board a bit larger and cut the board manually.
