A “Dallas” connector typically in an Olimex eval board is for use with 1-Wire devices. One of the most common 1-Wire device is iButton, you can checkout www.ibutton.com.
The Dallas connector is nothing more than a GPIO pin with a strong pull up, you can check the exact details in the schematics of your board.
The 1-Wire protocol uses just a single wire (of course with a GND) for transfer of data as well as suppliying of power to parasitic 1-Wire slaves. A popular 1-Wire slave is the digital thermometer DS18S20 from Dallas-Maxim Semicondutor.
