Floating a Peltier Device

I recently came across the Mellow (https://www.cookmellow.com/) - an all in one sous vide cooking machine. One of the features that struck me as interesting was it’s ability to cool food before cooking. This is useful because the food can be “refrigerated” and it’s cook time limited.

I’ve had decent success building a sous vide machine of my own using a web connected arduino, relay, temperature sensor and crockpot. What would be the best way to incorporate a peltier device into this kind of setup? Could I float it on the water? Attach it to the lid via it’s heat sink? Something else?

The Peltier device can be used to both heat and cool, but you need an excellent heat sink, a substantial power supply and a good fan for the heat/cold sink. Take a look at the portable Peltier coolers intended for automobiles.

I don’t imagine that the food coming out of a $400 boil-in-the-bag machine looks anything like their photos of grilled or baked meats.
