How do you use RFID technology to get the distance from a reader to a tag? I wanted to know the technical details as to how we would do this. Do we use an RSSI to distance model? Or does it give the distance directly?

There is almost never a reason to do so, and in most use cases, long range reading is undesirable because of possible conflicts with multiple tags.
In any case, RSSI is not useful for measuring distance, and will at best give indications of “near, medium or far”.
Is it feasible to do this with read count of the tags? Like just modelling the distance with respect to the rate of read count? Is there any other way?
In general, measuring distance using radio signal propagation is very, very difficult. If it were easy, you would have been able to buy $3 modules on AliExpress a decade ago.
But by all means, buy the linked RFID tag equipment and experiment, since you appear to have an unusual requirement.
