do the gr-10 pads remain under the gps or the come out on the side for soldering?

Based on p.29 of the data sheet, it looks like they’re only on the bottom - I assume you’re asking if they come up the sides a bit like on a QFN package?

The photo of the bottom on sparkfun makes it look like the module is just a little PCB with a lid bonded on top.
