One involves a real-time pressure/humidity sensor going to a custom small display.
The other involves a specific musical tuner that can show tuning of 4 instruments in real-time.

Completely depending on your spec’s I might have something on the shelf.
Do you need one,ten or bulk?
To give you a impression one PCB 5 x 100 mm double side 4 layer PCB (no components just chemical work) 10 pcb’s
22 Euro each.
Work: 2-4 days depending on accuracy 10 bits needed or 24 bits stability 50ppm/Celsius or better
Component price: again depending on spec’s.
Power from PC USB? normal<= 5V 100mA. direct involved type of display and it’s power house holding.
As you can sees simple things could be difficult.
