This isn’t something you can do without joining Apple’s “Made for iPod” and “Works with iPhone” program. The specs are locked down and you have to include one of their authentication chips in the accessory itself.
I know of some folks who have just successfully gone thru this process - not something hobbyists will be able to do. If you have a good idea and would like them to partner on designing/building the hardware, drop me a PM and I’ll pass along the info. They might be willing to collaborate with you on the application side of things and figure out a way to fairly split expenses and profits (if any ).
