I’m a beginner with Arduino but skilled in coding and soldering. I’m planning a very simple MIDI controller with USB MIDI output plus a screen. Old MIDI output as well would be a plus. Is this kit the right way to go?

Yes, that will work fine - run through this guide https://www.sparkfun.com/tutorials/289 to get started, then just have the midi output a serial string and display it
