I was wondering if there are servo motors out there that can go 360 and beyond and still can go to a specific angle if needed to.

Continuous rotation servos are available
Often, you can open up a “regular,” or non-continuous rotation servo and convert it - I’ve done this with success a few times and depending on how the servo was converted you may or may not be able to convert it back to its original functionality
To obtain the feedback you want with a continuous rotation servo, you might consider using an encoder. Tossing something like this on the rotation axis of your project might get the information (angle) you need: https://www.sparkfun.com/products/9209
You can buy servos that do one or more rotation, with programmable angles in the usual way. Look for sail winch or sailboat servo.
