I have a Sparkfun board with a sticker on it “ADM1602U-NSW-FBS/7” dated 2011-5-17.
What is it and can I get more info about it?

Sounds like one of the SerLCD boards like LCD 16397.

Can you attach photos of the top and bottom? That might help narrow down the exact board.
