Is there a tutorial that describes how to measure the power consumption of my MCU on the SparkFun Edge? I have code running and wanted to get a rough understanding of how much power its consuming.

There isn’t a tutorial for this unfortunately, what you’d need to do is record how much current the board is consuming and calculate power from that. A multimeter could be used to measure the current the board is using.
