Analog pressure sensor or momentary switch with hard "knee"

I would like to use a pressure or force sensor to control the brightness of an led by finger pressure. But, instead of a continuous brightness range, I need three “positions” - off (no pressure), dim (small pressure) and bright (large pressure). Alternately, I could try two sensors, so that when I press both it is bright but when I press one it is dim.Which do you folks think would be simpler? Could anyone please suggest sensors for both cases, in case way doesn’t work as well as the other? Does it make any sense to try and “stack” sensors, connecting them in series or parallel?

You might experiment with a Force Sensitive Resistor. They are very simple to use.

Any pressure sensor and a small microcontroller will do what you need.
