Arduino Red Board Turbo
I would like to know if the board has low power cut off / over-discharge protection when powered by a LiPo battery as I would like to leave this completely unmonitored and I don’t want my LiPo catching fire.

The RedBoard Turbo does not have an under-voltage/over-discharge protection circuit. The LiPo power circuit simply regulates the input down to 3.3V for the SAMD21 and also has a charging circuit for an attached battery. All of the batteries SparkFun carries have an under-voltage protection circuit on them so if you get one from us, you should have no issues with the battery discharging beyond safe levels.
