Greetings. Thanks for posting on the SparkFun forums.
1: In theory, any Bluetooth device with a matching protocol should pair with the WROOM, however, we cannot guarantee that any Bluetooth device that share a protocol with the WROOM will be compatible. Apple products don’t like pairing with 3rd party devices, for instance. You could Google “ESP32-WROOM” + whatever device you are trying to pair with to see if folks are successful with paring. Here is the WROOM datasheet and what is says about Bluetooth:
Protocols Bluetooth v4.2 BR/EDR and BLE specification
Radio
NZIF receiver with –97 dBm sensitivity
Class-1, class-2 and class-3 transmitter
AFH
Espressif Systems 1 ESP32-WROOM-32 Datasheet V2.7
Audio CVSD and SBC
2: There are plenty of differences between the ESP32 WROOM and Redboard Qwiic. I suggest you study the documents on their respective product pages to understand each product. If you have a specific similar feature that you are curious about, feel free to ask in your reply.
