I have two dewalt flexvolt 60v batteries in series (total 120v)output for running 110v tools. Each battery is 60v and 5amp capacity, Assuming I need to size the diode for each pack (60v) or the maximum across two packs (120v) diode? For each battery. What size Schottky diode do I require And any recommendations for types.
Those diodes look like they are there to protect the battery against a charger connected backwards, as long as you’re charging the batteries with a known good charger and you’re charging them individually, you’re probably OK skipping them.
If you use some, make sure they are rated for more than the battery voltage (60v) and rated for a current higher than the charger is able to supply.

I was thinking there might be some sort of overcharging when power tool is being used.
120v flowing back into the end battery?
