How do you protect pressure, humidity, and temperature sensors outside while still allowing them to function properly? Are there enclosures that allow them to function while keeping insects and moisture out?

You certainly want to protect the sensors and circetry as much as possible from the elements while still being as close to the natural environment as well. There are plenty of different ways to accomplish this task and I recommend that you consider reading through our tutorial on building a weather stations for SparkFun specific solutions:

It seems like we primarily used our SFE red box enclosure to protect primary circuitry and an ambient weather temperature and humidity solar radiation enclosure to protect the sensors. If feel like a pressure sensor should be able to work in this enclosure, too. I have provided links for both:
