Is it possible to program an Arduino Uno attached to your ESP8266 WiFi shield and if so can someone please post an example?

In what way do you mean? Just a regular reprogramming of the Arduino Uno?
Yes. I would program the Uno via the serial port, then any future tweaks of the sketch would be sent via WiFi
