What are ‘etch traps’ in PCB design and why are they bad?

Things like right angle and acute angle bends in tracks. They can prevent free flow of etchant and cause under-etching.
The correct term to search for is “acid trap”, and I would add “PCB” to avoid reading about plumbing.
