Galvanic Skin Response Sensing

I’ve done a few basic tutorials on how to set up a GSR sensor but I have questions about power/safety. I want to make a large scale project that senses the GSR of multiple people at once and uses that info for a visualization of some kind.

Again, my question is about power and safety. Most of the tutorials say to run this with the laptop unplugged from the wall, however, I would like to have my computer running more processor heavy visualization and anticipate it being installed in a gallery for several days. That being said, how could I supply power to these GSR sensors for multiple days without causing a safety issue?

I would set up each sensor with a battery and wireless transmitter, and have a regular PC aggregate and process the data.
