recomdations for Microscope LED replacement

Good Day, all. I have a microscope that I accidentally plugged the wrong wall adapter into and blew LED lighting. I am not sure which component actually was damaged but the company that makes the microscope no longer stocks or supports them so I am wanting to replace myself. I am somewhat electrical inclined. It already has an LED mounted to a puck so that is easily replaced.

Can you recommend an LED, controller, and wall adapter power supply combination?

I was looking at these and would like to know if they would work together and if there is anything else that needs to be included:

There is a dial rheostat on the side of the microscope that I would like to try and reuse to allow dimming of the LED which is very important. Is there a rheostat that can be purchased on Sparkfun as a replacement if it is damaged?

LED - no, you probably want ‘cool white’ instead of ‘warm white’ https://www.sparkfun.com/products/13105

Power - that looks like it will work; we also have a version with a MUCH lower current https://www.sparkfun.com/products/15313 @ 600mA - this is very close to the requirements of the single LED, so it may not be powerful enough (best advice to to probably get the more $ one)

As for a potentiometer, you need to know the resistance range and TYPE (linear vs logarithmic) - here are some options:
