Can logs be directed to a LAN syslog server, instead of to the local SD card?

If so, how is that configured? Ideally, configuring the syslog server’s IP address via DHCP would be an option.

Which raises the question: is the DHCP Client the typical minimalist 4 parameters implementation, or is there more to it?

It should be possible but unfortunately could not find any guidelines provided by sparkfun. All tutorials use the SD card.
