Saving Video to SD card using a microcontroller

Hello everyone. I’m working on a project that will require an extremely small camera launched up in a rocket. I’m hoping to control the camera recording in flight and save the video to an on board SD card. I know SparkFun has [this camera, but it is too big and heavy for the rocket. I was wondering if there was a way to use one of the stand alone cameras (like [this one) with an Arduino or a Teensy to save to an SD card, or would it be easier just to get a small “spy” [camera and let the microcontroller control it by wiring the buttons to the I/O pins.
