Can I add a camera to SparkFun Experiential Robotics Platform (XRP) (ROB-26619) Controller and program it using python. Any tutorials, recommendation, etc?

Not very easily and there won’t be ready-made examples, but you could wire this one Arducam 5MP Plus OV5642 Mini Camera Module up to the GPIO pins (labeled on backside of the XRP controller board) and designate the pins via python and use it that way
You could also make the camera apparatus entirely separate, using something like Raspberry Pi Camera Module 3 and a Pi to pipe video to wherever
