I need a simple level sensor suitable for a stationary application, to indicate deflation from the horizontal. Is a ball sensor my best option or can I get something more precise?

The little I got from your info, a ball sensor (i.e. float) is certainly one of the simplest.
A ball sensor (aka tilt switch) is binary. It’s one state at rest and the other when tilted beyond a certain threshold in a given plane and referencing gravity. If you wish to measure an angle, research inclinometer.
