You haven’t really given anything to work with, right?
Basically, “I want to make a [complicated thing] with no prior experience, who is ready to help me?”

I think you should begin with a list of limitations you’ve run into with similar commercially available equipment like musical controllers, samplers, etc and how your device designs can address or overcome them. Tackle one feature or improvement before moving to the next.
How much are you willing to spend?
