I’m not electrical only mechanical, what micro potentiometer/? Do I need to dim one 5mm led bulb from full potential over a wide range to zero light output driven by one 3volt 2032 battery.

That would depend on the LED. Post a link to the data sheet or product page for the one you have chosen.
You may need a 10 turn pot to even approximate your goal of “full brightness ↔ zero”, and still have some adjustability in mid-range.
