Hi the deacon,

The [SparkFun Fuel Gauge will work with that battery. That battery technically has three cells inside the wrapping but they are wired in parallel so it still functions as a single-cell LiPo battery pack.](SparkFun LiPo Fuel Gauge - TOL-20680 - SparkFun Electronics)
