Measure the charge amount of a solar panel

Hello, we have buyed the Sunny Buddy Lipo MPTT charger and a 6V solar panel.

It would be possible to take measurements with something similar to an arduino/ESP8266 of the charging amount of the solar panel and the quantity of mAh remaining of the Lipo battery in order to monitor them?

Not without additional hardware. The simplest option would be a [shunt resistor to measure current. Otherwise, maybe one of these products might work for your application:
