New to Arduino but want to build a Replica One

Good evening everyone.

About 3 years ago I was pretty active in the SX-48/52 and PIC scene. Even managed to build a crude VGA and NTSC video card.

Time has passed and I have forgotten most of everything. (lol).

Anyway, fast forward to today and now I have a Mac and a desire to build the Replica One from Briel computers. I still have my electrical workbench and most of the parts for the computer (plus the howto book on the Replica One).

The Replica One uses an Atmel (I believe) to produce the video but almost everything else is stock TTL chips.

So my question is, assuming I re-learned all of my NTSC knowledge, could programming a decent NTSC video display be within the power of a Arduino? And, is the Mac going to be a problem on the development side?

Sorry for my ignorance.

Thanks for any tips.
